"The culinary history of Norway centers around the old times, when the oil had yet to be discovered and times were hard. The sea was the source of protein, and here in Lofoten there’s an abundance of cod and salmon. The ‘Taste of Lofoten’ dish at Børsen Spiseri, one of the finest restaurants in northern Norway, features many local delicacies. Here, smoked salmon is on the fork and ready to disappear!"
